Vegetable stock

Vegetable stock

A good homemade vegetable stock is useful in a huge variety of dishes. Making vegetable stock is quicker than making stock from poultry or beef bones, but it's no less flavorful.

Vegetable stock only needs to simmer for 30 to 45 minutes to extract the maximum flavor from vegetables.

Ingredients:
2 carrots
1 large yellow onions
3-4 celery stalks
1 very small bunch parsley
enough water to cover all the veggies

Combine all the ingredients in a large stock pot, make sure all the vegetables are covered with water. Bring to a boil, then lower to a simmer. Simmer for 30-45 minutes.
